Mom’s potato salad

This is a back-to-basics recipe.  Nothing fancy here.  My Mom was asked EVERY TIME to make the potato salad, so she must have been doing something right!  Every time I make this for a party or occasion, I get nothing but compliments!

5 Lbs. Red Potatoes

1 Dozen Eggs

1 Small Onion

1 Jar Mayo

Salt & Pepper

Boil the potatoes (whole) until firm-tender (you don’t want them to overcook, or they will get mushy).  Remove from pot to a cookie sheet lined with paper towels to cool.  Hard boil the eggs*.  When the potatoes are cool enough to handle, peel the skin off and dice into around ½ in. cubes.  Peel the eggs and chop them up into the same bowl.  Chop or process** the onion and add to bowl.  Add salt & pepper to your personal taste.  Dump the entire jar of Mayo in and mix it up with your freshly washed hands.  Refrigerate.

*To make perfect hard-boiled eggs every time, place the eggs in the pot.  Now add COLD water to cover the eggs.  Place on stove and bring to a boil.  As soon as the eggs start to boil, set your timer for 15 minutes.  When the timer goes off, CAREFULLY dump the hot water while running cold water into the pan to replace it.  Keep running the cold water into the pan until it STAYS cold.  (the heat from the pan and the eggs will warm the water).  Now they are ready to peel!


*This little gadget will save you tons of time in the kitchen.  Remember, TIME is MONEY, so if you save time you are saving money.  I use mine to chop onions, nuts, make cracker crumbs (instead of buying bread crumbs) I use the wand to make tomato puree out of whole canned tomatoes.  I just stick it straight in the can. (The whole tomatoes are better because they are cheaper, require less processing and if you want to dice them you can.)  I also use it to make milkshakes and to blend gravy and soup right in the pan.  Anyway, when I find something good, I always try to share.  My husband bought me a similar one at Wal-mart, but I couldn't find the exact one.  Click on the picture to see more.  If you decide to get one, remember, Wal-mart has FREE site to store shipping.


 

Cowboy Beans

2 cans pork and beans
1 can pinto beans
1 can great white northern beans
1 can kidney beans
3/4 to 1 cup ketchup or BBQ Sauce
3 tbsp mustard
3/4 to 1 cup brown sugar
1 1/2 lbs. ground beef
one onion chopped fine

Brown ground beef and onion together, salt and pepper to taste.
In a crock pot mix all ingredients together and mix well. Cook until simmering. Can also be made on stovetop.
